A bit of warning: Project Server is a massive, massive undertaking if you are rolling it out at the enterprise level, especially if you want to do workflows with any complexity. Do not expect to be able to grab this off the shelf and start working with it if you don't have pros who have set it up and used it before. It's the only "SharePoint product" for project management, aside from just using a combination of the other OOTB features already available.
Depeneding on how seriously your organization takes project management, I would suggest not restricting yourself within the realm of SharePoint.
